Giò Bì Hảo Hạng (Vietnamese pork sausage with black)

The Giò Bì Hảo Hạng of Hoa Nam is a traditional Vietnamese brewery specialty (often referred to as the Vietnamese Mortadella or meat sausage). It is based on a fine-cut pasta made of the finest pork. The speciality of this variant is the generous proportion of fine-cut pork sausage (chrust stripes), which gives the sausage inside a unique, slightly crisp texture and a distinctive bite. It is mild-spicy in taste and is tasting with traditional fish sauce.
