Matoki (also called Matooke or Ibitoke) by Transfood GmbH is the main basic food of East Africa. It is a special variety of cooking bananas that is harvested in the immature, intensely green state. The fruits are slightly shorter and in the middle part thicker than conventional fruit bananas. Since they are extremely starchy and hard in the raw state, they are processed exclusively as vegetables cooked, steamed or crushed.
